Saw this today on Semi-Homemade Cooking with Sandra Lee and it looks so good! With the holidays coming up this would be a neat dessert to serve.



1 (19.5-ounce) box chocolate brownie mix (recommended: Pillsbury)
3 eggs
1/2 cup vegetable oil
1/4 cup plus 2 teaspoons creme de menthe liqueur, divided
1/2 cup chopped creme de menthe thins, about 18 (recommended: Andes)
1 (8-ounce) package cream cheese softened (recommended: Philadelphia)
1/2 cup sugar

Lightly spray a 1 1/2-quart souffle dish with butter-flavored cooking spray.

Make a foil ring, 1-inch thick, for souffle dish to sit on inside a 5-quart slow cooker.

In a medium bowl, combine brownie mix, 2 eggs, vegetable oil, and 1/4 cup creme de menthe. Stir using 50 strokes or use a hand blender on medium speed for 1 minute to combine. Fold in chopped mint thins. Transfer to prepared souffle dish and set aside.

In a medium bowl, combine cream cheese, remaining egg, sugar, and 2 teaspoons creme de menthe. Using an electric mixer beat on low speed until smooth. Spread over brownie mixture. Use a butter knife to cut cream cheese mixture into brownie mixture for a marble effect.

Place souffle dish on top of foil ring in slow cooker. Lay 8 paper towels over top of slow cooker bowl and secure with lid. (This helps to trap steam.)Cook on LOW setting for 4 1/2 to 6 hours. (Do not lift lid to check brownies for the first 3 hours.)

Allow brownies to cool completely before cutting

I sent $150 to someone on the TP for Thomas trains and Geo Trax for LC's birthday TWO months ago, and I just got the box without all the Geo buildings and trax!!! WTF! Supposedly the box was shipped back to them once, still its been foreve and I'm not sure I believe it. They are blaming it on their husband but I'm still very ANNOYED as we are playing the email game. They obviously won't arrive for his birthday! If at all. :( Plus some were supposed to be for Easter! I know it was a large order, but if someone had given me $150 I would have packed the box VERY carefully! WOuldn't you? I was very patient waiting for them but now this is getting rediculous.

Sorry had to vent.

Its near 80 with a perfect breeze!! Gorgeous gorgeous gorgeous out there!

Ali JUST now woke up after, an almost 5 hour nap?! I laid her down at noon! She is such a sleeper. Amaya kept waking up after I put her down, just like she did yesterday, but she finally went down for a good nap about an hour ago.

Happy Birthday Carissa!!!

On his way to bed with Daddy, LC came over to me to give me a kiss goodnight. He said "I wanna give you a kiss Mom. Muah." Then immediately "I wanna kiss the baby! Muah." and he kissed my bare belly! (I was reclining back, with my shirt up, relishing these last kicks and giving it some room to move! It was really sweet. Then Justin said "pretty soon, and the baby's going to be out. 2 more days. (not even!)

I feel like totaly crap tonight. :( I seriously almost got sick earlier and I've had an awful headache. I know my BP is fine though, because that was checked earlier. I hadn't ate since 1p though, and it was like 8p. I stuffed myself w/chinese food at the mall, and nothing sounded good all evening. Finally, at 9p I made myself some coco wheats and that helped a bit. However, I'm barely getting anything done. I'm sooo stressed out. :(

Happy 4th of July!

We are up north at the cabin. There was too much traffic yesterday so we took the back way and it took us about 2.5 hours.

We just got back from taking the kids swimming! They both did great and had fun! J's grandparents went on the boat with us. The 2 swimming islands were packed so we drove over to the tiny beach at the tiny campground. We just beached the pontoon at the shore. LC was a little mad at first becuase he wanted to be at the islands but he warmed up to it pretty quickly. I put Ali right on the sand 1/2 in the water. LC ran in and out and GMIL even rolled up her pants and played with him for awhile. This girl came over and started playing with Ali and Ali's tube, and then LC kinda followed her around. He liked watching the other kids swim and after about 20 mins he was going out to his waist or so and getting down on his belly. We stayed about an hour but then they were ready to go. Ali was done but LC would have swam longer.

When we got back J's uncle was here. I fed Ali some pears and now she's napping again. We both napped earlier from 11 to 2p!

Guess who made this tonight??!!



That's about the craftiest I get! I'm very proud of it though. It will look soo cute in LC's room.

(The pages started coming out of the book, so I saved them in case I could think of something to do with the pics, and I did!)

The frame was $9.97 at Walmart. So that's not bad for wall art. :D
